Simply delicious aval payasam. This can be prepared with jaggery or sugar as per your choice.
Poha/Brown Aval 1 1/2 cups
Crushed Jaggery 2 to 2 1/2 cups
Coconut milk 1/2 can
Ghee 1 tbsp
Powdered cardamom 1 tsp
Dried coconut pieces 2 tbsp
Golden Raisins 1 tbsp
Clean and drain the avail from freshwater. While keeping the Aval soak. Heat a heavy bottom pan with 1/4 cup of water. Add Jiggery to it and let it blend over on medium heat. Once it is melted, add the soaked aval to the vessel and blend well.
Add coconut milk and cardamom gently and switch off the heat. In another small saute pan, heat cashew nuts, ghee, coconut pieces and raisins. Allow the cashew and copra turn golden brown and the raisins swell up. Add this heated cashews, coconut pieces along with the ghee to the payasam mixture. Blend gently and serve warm or cold.
